Potato latkes

Sunday is a good day for an extravagant breakfast. This is easy. Potato pancakes, or latkes are really more potato than pancake. The ingredients are simple and the proportions are approximate. Some people like more flour and perhaps a touch of baking soda. Onions can be added to taste.



Recipe #32 Latkes

2 grated potatoes
1 small onion
1 tablespoon flour
1 egg
salt and pepper
oil for frying


After the potatoes have been grated, squeeze out as much water as possible. Mix ingredients well. Fry small cakes and keep them warm in the oven. Serve with apple sauce or sour cream. I like them hot and plain.
